Zhanjiang white-cut chicken is a traditional dish from Zhanjiang, Guangdong. In Guangdong, where "no feast is complete without chicken," it is regarded as the first dish for festive meals and banquets. This dish wins on the pure flavor of its ingredients, and its cooking method is a strict test of ingredient quality — the quality of the chicken is immediately revealed when prepared using the "white-cut" method.

In its preparation, Zhanjiang white-cut chicken follows the principle that "great truths are always simple." It uses locally raised Sanhuang chicken, gently simmered in water at the "shrimp-eyes stage" (around 70°C), then chilled in ice water so the skin turns crisp and the meat firm, preserving the chicken's original flavor to the greatest extent. The dipping sauces are the finishing touch: either the savory scallion oil or the aromatic sand ginger can draw out the chicken’s inherent sweetness.
This dish embodies Zhanjiang's food philosophy that "original flavor is the ultimate flavor." At the same time, since the words for "chicken" and "good fortune" are homophonic in Chinese, it also carries an auspicious meaning, making it a banquet dish that combines great taste with good wishes.
