Fujian Quangang-Style Fried Rice Cakes

Quangang-Style Fried Rice Cakes ("Fuguo") are a specialty snack from Quangang District in Quanzhou, Fujian Province. They are known for their thin, crisp exterior and springy, non-sticky interior. In 2016, the Quanzhou snack-making technique (Quangang-Style Fried Rice Cakes) was included in the fifth batch of Quanzhou's intangible cultural heritage representative items.

Fuguo is made using the freshest ingredients: oysters, lean pork, rice grains, cabbage, carrot, minced ginger, minced garlic, and local sweet potato starch. These are mixed into a thick, scoopable batter. The batter is shaped using a five-pointed mold, then fried in hot oil for several minutes. Once golden and fragrant, the fritters are ready. Fresh out of the pan, they are crisp on the outside and tender within, bursting with aroma and savory flavor. When eaten with a dip of soy sauce and vinegar, they become even more fragrant and delicious.
