Making Yanqing Fire Spoon is known locally as "Hammering the Fire Spoon." The key to making it lies in fermenting the dough. The dough used is partially leavened, which gives the finished Fire Spoon its crisp texture. The kneaded dough is dipped in a pepper–salt mixture, gently pressed with the palm, and then shaped into a bowl-like form with a Fire Spoon hammer. Finally, it is baked until the surface becomes crisp.
Freshly baked Fire Spoon gives off an enticing aroma. Locals often fill it with pork knuckle or pork head meat, then add chopped cilantro and green peppers, and eat it like a sandwich. In the past, people in Yanqing would tap the dough board with a Fire Spoon hammer to draw in customers. Today, Fire Spoons remain a nostalgic taste that Yanqing residents never forget.
