Songmen yellow croaker, also known as yellow croaker, originates from the Songmen area of Wenling, Zhejiang Province. It is a type of dried yellow croaker, named for its pale yellow–white color after processing. In 2009, the traditional processing technique for marine fish (Songmen Yellow Croaker Traditional Processing Technique) was included in the Zhejiang Provincial Representative List of Intangible Cultural Heritage.

Songmen's long history of salt production has provided excellent supporting materials for curing yellow croaker. Locals used to say that the best yellow croaker requires "fish from Yuesitan, salt from Cangshan, and spring water from the Longyan well."
The selection of fish marks the beginning of a meticulous process. After selecting the right fish, each step, from splitting, salting, washing, to drying, must adhere to strict standards. Songmen yellow croaker has a naturally distinctive flavor. And with only minimal preparation, it becomes a true delicacy, whether steamed, braised with pork, or simmered in tofu soup.
